Tiny Bubbles

Healthy Mexican Spahitas


Recipe for this yummy dish!

sliced tomatos
cheese
sour cream
your choice of pasta noodles, I use whole grain


in a slow cooker overnight cook 1 lb of your choice of steak, (I use organic top sirloin) two packages of taco seasoning, (or I use 1/4 a cup of frontier's organic taco seasoning), with one can of black beans, (I sprout my beans from dried beans, anyone wanting info on this process please email me.) and Two cups of water, more or less depending on the length of cooking, I slow cook mine over night about nine hours, I also throw in onions, peppers, whatever fajita stuff I have on hand.

For my protein packed guacamole, I use one avacado and 1/2 cup low fat small curd cottage cheese, buy the good stuff not the walmart brand you CAN taste a difference. Now I know you are saying what cottage cheese, gross I hate cottage cheese! Just try it. It does not taste like cottage cheese at all. You can also add cilantro, garlic, or whatever you normally put in you guacamole. Put it all in a blender and blend it until there is no more chunks. This is a very creamy and rich guacamole. I personally would add cilantro, garlic etc after you blend the guacamole.

Layer it all up, in this picture there is no meat, because I don't like cow....

You gotta try this recipe, super yummy.

If you are allergic to wheat, or going carb free try it all piled up on top of a salad or corn tortilla. Also very yummy on flour tortillas too!

Oh how I love my gro baby diapers, can I count the ways,
1.) Saves lots of money do you know by the time your lil one is potty trained that it cost about $3000 buck, whoa!! Gro baby diapers cost about 100 bucks for enough to get you through a day, so I have enough I wash about every two days.
2.) I am not filling up the landfills with diapers that take 75 years to break down and emit toxic dioxins!
3.) My lil one has very sensitive skin and this is one of the few things that don't cause major issues!
4.) They are uber cute!
5.) I like the way her poop turns the washer water lime green! (I know that is highly weird, but it is so cool!)

And the dislikes I have are as follows
1.) they are not coming out with prints till the end of the year
2.) that it is not june yet, in june vanilla snaps and laundry stuff will get released
3.) that I just don't have enough!!

I am a lazy blogger

I have realized how long it has been since I have blogged.... oops, I have find life to be challenging at this point. In the last trimester of my pregnancy I was on bed rest for a spinal condition, Spondylosisthesis, yikes I can barely say that. After my pregnancy I just felt awful, she was breech and I had a c-section. Something was just not right, in fact I have not felt well for a long time. I had my thyroid checked because I have been struggling with weight for a while and that was good, that doc said it was because of my PCOS and the med for that would dry up my breast milk. I was not going to do that. I saw another doctor who specialized with a more natural approach to health and medicine. Turns out I have some major food allergies, I am allergic to grains, soy product, insulin resistant. This limits a lot out of my diet due to my being a lacto-ovo vegan. Doc said I had to start eating at least some fish, ughh. It is so gross. My food allergies were actually fueling my PCOS, making me gain gross amounts of weight for my body frame, making me lethargic, have joint pain, and many other symptoms. Having a three year old and a two month old is very challenging when all you want to do is sleep. I started my new diet, well I guess it is more of a lifestyle than a diet and after half of a day my body was going through serious withdraw symptoms. I realized I needed to have more preparation for my new grain/soy/sugar lifestyle. My house was completely chaotic and is getting better due to my bed rest (although I wasn't a very good bedrester), and I had no meals prepared or shopped for groceries. So today I am finishing the house, tomorrow meal planning, Tuesday shopping, and Wednesday is D-day. So all of you bloggers out there hold me accountable and get ready for recipes and pics of food. I will keep you updated on my weight loss and my overall energy and well being.
